protein bars

Quick and delicious, these are a much healthier alternative to store-bought bars which are full of artifical ingredients. The only unhealthy part about these homemade protein bars is they're so good we can't stop eating them! ♥

farragio World's Best Homemade Protein Bars

4 Tbs butter (salted or unsalted)
16 oz jar natural peanut butter (creamy or crunchy)
1/4 cup honey
1/4 cup chia seeds
1/4 cup flaxseed
2 tsp vanilla extract
2 cups crispy rice cereal
2 cups quick oats
1/2 cup raisins
1/2 cup chopped walnuts (optional)
1/2 cup chocolate chips (mini or regular size)

In a large sauce pan over low heat, melt all ingredients except for the chocolate chips, for about five minutes, stirring occasionally. When the ingredients have warmed enough to sufficiently mix together, remove pan from heat and let cool for 15 – 20 minutes. After the mixture has cooled, add the chocolate chips*.

Grease a 9” x 13” pan with olive oil and then coat the bottom of pan with sifted cocoa powder. Turn mixture into pan and compress and press to all sides. Refrigerate for at least two hours, and then cut into desired-sized bars. (The bars may be a little crumbly.)

Store in an airtight container in refrigerator.

farragio hint:
*It is easier to mix and press ingredients by hand. Wearing unpowdered rubber gloves will also help keep ingredients from sticking to hands.
