Hot Peppermint Patty

This is a fun drink to make on a cold winter evening. There are different recipes for making it but since I tend to be lazy in the kitchen I figured out the easiest way that is still just as delicious.

Hot Peppermint Patty

Makes 1 serving

1 (8 oz.) packet instant hot cocoa mix with marshmallows
8 oz. milk (your choice; whole, almond, etc)
1 - 2 Tbs. peppermint schnapps

Heat milk in a microwave-safe mug on high for 1 1/2 to 2 minutes.

Happy National Garlic Day!

I have a cooking motto:

    "There is no such thing as too much garlic."

I love garlic. I love the flavor and the aroma.

When I'm not busy working on my skin care line and my sweet tooth strikes, these peanut butter chocolate clusters are the perfect choice and so easy to make. And for the little amount of effort that goes into them, they're surprisingly delicious.

They're great in the summer when it's hot and you don't want to turn the oven on, but they also satisfy in the winter, because hey, when isn't it a good time for chocolate and peanut butter???

When you need to sift flour but don't have a sifter or you just don't feel like going to all the trouble, pour some flour into a large mixing bowl and stir it with a wire whisk for a few seconds to fluff it up, then scoop out with your measuring cup. Whisk it after each scoop to keep it fluffed.

Tortilla Pizza

1 flour tortilla
1/4 to 1/3 cup pizza sauce
Chopped veggies of choice (bell peppers, onions, etc.)

I prefer making my own pasta sauce and what I love about this sauce is that it can be used for pasta dishes or as a pizza sauce, and it keeps for a few weeks in the refrigerator so it's a great go-to sauce if you need something in a hurry.

I told you about Unusually Good Low-Fat Brownies, and now is this unusual way to make low-fat spice cake.

Unusually Good Low-Fat Spice Cake

1 (15 oz.) can pumpkin
1 (18.25 oz.) box spice cake mix

Add the pumpkin, and nothing else, to the spice cake mix. ONLY add the pumpkin to the spice cake mix; do not add anything else the mix calls for. Mix together until fully blended and bake as instructed.

When I'm not in the mood to make a traditional garden salad I'll make this instead. It's quick and easy and still packs a lot of flavor.

Cucumber Chip Salad

1 cucumber, sliced
Bleu cheese crumbles
Garlic powder
Onion powder
Cracked sea salt (or a very light sprinkling of table salt)
Cracked black pepper (or ground pepper)
Extra virgin olive oil

A friend told me of an unusual way to make low-fat brownies that are actually quite good.

Unusually Good Low-Fat Brownies

1 (20 oz.) box brownie mix
1 (15 oz.) can black beans

Puree the can of black beans in a blender and add to brownie mix. ONLY use the black beans with the brownie mix; do not add the oil, eggs, and water that the mix calls for. Just use the pureed beans. Bake as instructed.

Early in my marriage I knew I'd need a lot of help in the cooking department and came across a great booklet at the grocery checkout called Lawry's Weekday Gourmet. Over the years the booklet fell apart but I made sure to save this family favorite.

My son doesn't like bananas, but he loves my banana nut bread it's that good. I think it's the orange juice that enhances the flavor. The best time to make it is when you have bananas that are past their prime. They're softer and easier to work into the batter.
