Banana Nut Bread

My son doesn't like bananas, but he loves my banana nut bread it's that good. I think it's the orange juice that enhances the flavor. The best time to make it is when you have bananas that are past their prime. They're softer and easier to work into the batter.

1 3/4 cups sifted all-purpose flour
2 1/4 teaspoons double-acting baking powder
1/2 teaspoon salt
1/3 cup butter, softened
2/3 cup sugar
1/4 cup orange juice
2 beaten eggs
2 over-ripe bananas
1/2 cup chopped walnuts (optional)

Preheat oven to 350°F.

Chop the walnuts. (An easy way to "chop" walnuts is to put them in a zip lock baggie and hit with a meat mallet, rolling pin, or I've even used a hammer in a pinch.)

Sift together the flour, baking powder, and salt.

In a separate large bowl, blend until creamy the butter, sugar, orange juice, eggs, bananas. Mix in the walnuts. Add the sifted ingredients and fold in until all ingredients are completely mixed.

Place the batter in a greased bread pan. Bake for approximately 1 hour, or until knife inserted in the middle comes out clean.

Allow to cool. Then, slice and enjoy!
